SETFIA supports education of young chefs

28/08/2009

SETFIA recently donated finfish from the Commonwealth Trawl to a Holmesglen run "Sustainability Showcase Dinner".  Celebrity Chef Pete Evans set the menu and spoke about the trust the consumer can have in Australian managed wildcatch fisheries.  The dinner was an opportunity for the sustainability message to get through to diners and aspiring chefs in training.  Diners were mostly the employers of graduates with many owning large restaurants in Melbourne.  Apprentice chefs are the future purchasers of SE wildcatch.  Thanks go to members Anthony Ciconte for organising and Tony Guarnaccia for donating the fish used.  David Guillot, Tom Bibby and Simon Boag also attended on SETFIA's behalf.
